All of you might be wondering what has happened to this blog. Whether I intend to continue with it or I have totally forgotten about it. Well, let me assure you, forgetting this blog will be equivalent of forgetting my health.
But there has been so many backseat happening at my end that health was the least of my worries. Unfortunately, it shouldn’t have been that way, but sadly it is.
I was involved in a minor accident along with my 5 year old daughter. Though by God’s Grace nothing major has happened but I have injured my knee. There were no major injuries but the blood clot in the knee has left me limping for weeks.
And with that comes the fact, everything health related is out of the window. I am back to my unhealthy eating habits. The 13 lbs that I have lost seem to have all piled back up. I am too scared to check my weight just as yet. i would check when I have fully recovered and have healed my knee completely.
But there cannot be any excuse for not eating healthy. And I am just going to get right on top of it by starting with a brand new day. Healthy eating, here I come.
I cannot do elaborate preparations in the kitchen, as I am restricted to stand only for a limited time. And what can be a better way than to make the overnight oats. I am a huge fan of this Cinnamon Apple Overnight Oats. It is not only easy but also very very delicious.
All I have to do is prep all the ingredients at night and I have a delicious and yummy breakfast ready for me in the morning.
Cinnamon Apple Overnight Oats
- 1/2 cup rolled oats
- 1 cup almond milk
- 1/4 tsp cinnamon powder
- 1 apple, chopped
- 1 tbsp honey
Method to make the Cinnamon Apple Overnight Oats
- Combine oats, almond milk, cinnamon powder, apple and honey in a glass container.
- Leave it overnight in the refrigerator, enjoy cold.
Protein: Almond Milk
Whole Grain: Rolled Oats
Healthy Sugar: Honey
