For the marinade
- 500 gms boneless skinless chicken breasts
- 4 tbsp virgin olive oil
- 2 tsp cumin powder
- 2 tsp red chili powder
- 1 tsp allspice powder available in any Middle Eastern store
- 1/2 tsp ginger garlic paste
- salt to taste
- 1/4 tsp black pepper powder
For Making The Shawarma
- 1 cup mayonnaise light, fat free
- 1 pod garlic peeled
- 3 tbsp lemon juice
- 4 Arabic Bread you can even use whole wheat pita bread or whole wheat tortilla wraps
- 1 cup cucumbers diced
- 1 cup tomatoes diced
- 1 cup lettuce leaves thinly sliced
Mix all the ingredients for marination, olive oil, cumin powder, red chili powder, all spice powder, ginger garlic paste, salt and black pepper powder to the chicken and marinate it over night or 8 hours.
Preheat the oven to 400 degree F. Arrange the chicken pieces evenly on a sprayed or butter baking sheet in a single layer. Bake for 8 minutes, flip the chicken pieces over, then bake for another 8 minutes. Allow it to cool a little and cut into thin strips.
Grind the garlic to a fine paste. Add this garlic paste to the mayonnaise and lemon juice and mix thoroughly.
Apply this to the Arabic Bread, add the thinly sliced chicken, cucumber, tomatoes and lettuce leaves. Roll it up and serve with some salad.
