Preheat oven to 350 degrees F.
Line a large baking sheet with parchment paper and set aside.
Place all ingredients in a large bowl and beat with an electric mixer for 2 minutes.
Take the dough with a medium size cookie scoop, (about 1 tablespoon each).
Roll into balls with your palms and place on the prepared baking sheet. Gently press down with a fork.
Bake the cookies for about 10 to 12 minutes.
Remove from oven and let cool on the baking sheet for 5 minutes, then transfer onto a cooling rack to completely cool down. Enjoy with a glass of milk.
